BEEF STEW

I love to explore new cuisines and create new recipes but there are days when I just need to cook some homey, comfort food. Mostly my days consists of plant-base rich dishes but than there are days that I just crave some hearty meat dish.  Beef goulash is one of those go-to dishes that I always prepare when I need to nourish my soul and soothe my homesickness. Rich and hearty stew with chunks of good beef and lots of onions and generous amounts of paprika. This is my family adoption of traditional Hungarian Goulash.

Mung Bean Salad with Beets

The inspiration for this recipe came to me on a hot, sunny Myanmar day, where a craving for chickpeas grabbed hold of me. Chickpeas are a staple in my pantry back home in Tennessee – I use them all the time. I knew that living in Myanmar might make some of my favorite ingredients scarcer, but I definitely didn't think that chickpeas would be one of them. I found a can of the little legumes in one of my friend’s pantries here early on, so I assumed they wouldn’t be too hard to find.
